Single Malt Whiskey, Batch No. 7
100% malted barley, aged 5 years in ex-sherry casks
Batch No. 7 represents the pinnacle of our single malt program. Distilled from 100% locally malted barley in our custom copper pot still, this whiskey spent five years maturing in Pedro Ximénez sherry casks imported from Jerez, Spain. Only 480 bottles were filled from this batch, each one numbered. The sherry influence adds a luscious richness without overwhelming the barley’s natural character—a bridge between Scottish tradition and Pacific Northwest terroir.
Deep gold with amber edges. The aroma is layered and inviting: dried fig, orange marmalade, and honeycomb lead, supported by toasted malt, dark toffee, and a suggestion of pipe tobacco. The palate is round and generous, with stewed plum, dark chocolate, and walnut on a bed of creamy malt sweetness. The sherry cask influence provides structure without heaviness. Finishes long and warming with dried fruit, gentle oak, and a final note of sweet baking spice that fades slowly.
